First; double chocolate cheesecake-
Can't say I know where this recipe is from, I believe a magazine but couldn't be 100% sure but it's in my recipe book so I must have copied it from somewhere...
Ingredients:
300g - Milk Chocolate
100g - Dark Chocolate (I used white chocolate as I prefer it but it didn't quite get the marble effect I was looking for)
300g - Cream Cheese
200g - Mascarpone
175g - Digestive Biscuits (Sorry not photographed above)
50g - Butter
1- Crush the biscuits and melt the butter and combine
2- Press the biscuit mixture into the base of a tin (should be 20cm but I used a lid of a bowl haha)
3- Mix the cream cheese and mascarpone
4- Melt the milk chocolate and dark chocolate separately
5- Fold the milk chocolate into the cheese mix, then stir in the dark chocolate so that it looks streaky (epic fail for me)
6- Spoon into the tin, level off the top (add sprinkles or curls) and chill for minimum 2 hours (if you can wait that long).
Second; little cakes-
This is a recipe from The Children's Step-By-Step Cook Book which I received back in '99 from my Grandparents. I'm sure little cakes are all done with the same or very similar recipes but this is one that's never failed me...
Ingredients:
For about 8 larger cupcakes-
115g - Caster Sugar
115g - Butter (stork)
2 - Medium Eggs
115g - Self-raising Flour
-- For the frosting I used icing sugar, melted butter and melted milk chocolate but I have no idea of which quantity I just mixed and added 'til it was good.
1- Set the oven to 190oC
2- Mix the butter and caster sugar together so its light and creamy
3- Add the eggs and mix
4- Add the flour and mix
5- Spoon the mixture into the cases and bake for 12-15 minutes (until you knife comes out clear)
6- Decorate as you please, I like to make a chocolate frosting, chocolate curls and a piece of chocolate (as I had some leftover).
Last (but definitely not least); Cookies-
This is a recipe I first saw on Vivianna Does Make Up blog I've used it a couple times; when I want to treat myself or have guests over and they're the most delicious cookies EVER. And that's from someone who has definitely eaten more than their fair share of biscuits. I've taken out the cocoa as I prefer a double rather than triple chocolate cookie but other than that they're very similar...
Ingredients:
For 10-12 large cookies-
Splash of milk
200g - Butter
300g - Caster Sugar
1 - Egg
275g - Self-raising Flour
Chocolate
1- Set the oven to 220oC
2- Soften the butter and beat with the sugar until creamy
3- Add the eggs and mix
4- Add the flour and mix
5- Add the milk if the dough isn't coming together
6- Add the chocolate
7- Pop onto a couple of baking trays and bake for 10 minutes and leave to cool for 20-30 minutes.
I actually ended up refrigerating the dough and baking them the following evening (which is why the lighting is a little off) as wanted them to be fresh, I also only cooked eight have popped the rest of the dough in the freezer but I'm not entirely sure if they'll be good later...
